Apple Fritters

My husband really wanted donuts the other day at the store and I said “NO”.  I felt so bad as he got a little pouty.  So I was lucky enough to come across a blog that day from Seeminglygreek.  She had this wonderful recipe to share.  I made these wonderful Apple Fritters in no time with a minor variation that I’d like to share.  Oh yes…. my hubby was happy to get his donuts and enjoyed the Fritters very much!  So thank you Seemingygreek for the wonderful recipe!
Homemade Apple Fritters Recipe:
1 heaping cup All purpose flour
1/3 cup sugar
1 tsp baking powder
dash salt
1 – 2 tsp. cinnamon (depending on how much you love cinnamon)
1/4 tsp nutmeg
1/2 tsp vanilla
1 T butter, melted
1 egg
1/3 cup milk plus more if needed
1 – 1 1/2 cups chopped apple
Oil for Frying ( I was out of oil, so used Coconut oil and it worked fantastic and is better for you)
Milk and powdered sugar glaze for dipping or just powdered sugar for dusting
(about 1 cup powder sugar and 1 T milk or more)
Mix all ingredients together, slowly add the wet ingredients minus the apple.  Carefully mix until well combined but not overly beat, gently fold in apples pieces now.  The batter should be the consistency of a light cake mix.  Once the oil is ready, use a cookie scooper or soup spoon, place a few balls of dough into the oil.  Be careful not to overcrowd and watch carefully for the underside to turn golden brown, then gently flip over and continue frying until done.  I cooked mine about 45 seconds per side.  Adjust cooking times based on size of fritters and temperature of your oil.
Wonderful snack, breakfast or desert!!  Once in awhile it’s okay to indulge!  Your family won’t complain either!!

A Time for Everything

God gives us work to do on earth.  Most of the time, just knowing God doesn’t automatically make the work easy.  We’ll have many difficulties.  God will provide for our needs,  and we need to accept the work he has for us, even it it’s hard.  Ecclesiastes 3:1-11 is a great passage to remember when your having a hard time.  It reminds us that there is a time for everything.  Life won’t always be easy and perfect, but that doesn’t mean God has lost control.  He has special work cut out for each of us as.  He can see the whole picture, so he knows how the good and bad will fit together in the end.  We just need to obey him, do his work and trust him always.

I got this out of a book called “God’s Words of life for Teens”.  Found this book sitting up by my computer and started going through it.  This particular page talked to me.  My family is going through a lot right now, and this just seemed to ground me, make me realize everything is okay.  Just believe, have faith and we always seem to get through the difficult times.  God never leaves me stranded.  This book was placed in front of me for a very good reason today.  Thankful once again for a God that is so good.
