I am always trying to find different ways to prepare our vegetables. For years I was always serving them the same boring way. I have finally learned to step out of the box and try new things, get creative with other recipes and add the things that I love to my dishes. This dish, was a hit with the family and will be a keeper for sure! Hope you enjoy it as well!!
Cut 1 bunch of asparagus into thirds. Heat 2 teaspoons of sesame oil in a skillet over medium heat. Add 3 cups of baby bella mushrooms and two minced garlic cloves and cook, stirring for about two minutes. I then sprinkled some ginger into the mix for some extra flavor. Add the asparagus and 1/3 cup of water, bring to a boil, cover and cook until crisp and tender, about three minutes. Add Two tablespoons of soy sauce or as much or as little as you want and two tablespoons of butter to the pan and cook on low for about two minutes. Sprinkle with feta cheese and Season with salt and pepper and enjoy…. delicious!
