Healthy Linguine with Asparagus and Goat Cheese


This is a wonderful healthy dish, only 284 Calories per serving.  Sinfully delicious without the guilt!  Fifteen minutes to prep and fifteen minutes to cook!  Can’t get much easier than that!  Fast, easy, and delicious!  Oh yes, and most importantly… Healthy!!

1/2 poind fresh asparagus

1/2 cup canned no salt added chicken broth, undiluted

1/4 cup dry white wine

1/4 cup chopped shallots

1/4 tsp pepper

1/2 (8 ounce) package Neufchatel cheese, softened

2 ounces goat cheese, crumbled

2 tablespoons fresh lemon juice

8 ounces linguine, uncooked

1/2 cup thinly sliced sweet red pepper

1.  Snap off tough ends of asparagus.  Remove scales from stalks with a knife or vegetable peeler, if desired.  Cut asparagus into 1 inch pieces.  Set aside.

2.  Combine broth, wine, shallots, and 1/4 tsp. pepper in a suacepan.  Bring to a boil; add asparagus.  Reduce heat, and simmer 5 minutes.  Add cheeses and lemon juice; cook over low heat, stirring constantly, until cheeses melt.   Set aside, and keep warm.

3.  Cook pasta according to package directions, omitting salt and fat;  drain.  Place pasta in a serving bowl.  Add asparagus mixture and sweet red pepper; toss gently and serve immediately.

Yields: 5 one cup servings.
