Upon reading my Facebook this morning I stumbled across this lovely reminder that we are not alone in our fight against whatever Auto Immune Disease we are dealing with.  I hope you find strength in knowing that you can reach out and share with others who feel alone in there fight as well.  One thing I have done that helps me, is I search for positive quotes (you will find those in my Family, Faith and Inspiration category.  I post them on post it’s and place them in places where I will see them throughout the day.  It encourages me to stay strong on the days I feel the weakest.

“One thing that you must always remember is that you are not alone in this fight. There are hundreds of thousands of people all over the world fighting with you. I am fighting with you. In the moments where everything feels the toughest, I want you to dig down deep, find the strength you need to fight this disease, and create for yourself a life that is filled with health, success, happiness, and love.””

Grilled Flatbread

Standard

On this chilly day, I decided that some soup and homemade flat bread just sounded perfect.  So I searched for a healthy recipe to share with you and my family!  I hope you enjoy this recipe as much as we are tonight!!

Grilled Flatbread

Seasoned with Olive oil and rosemary, these rustic grilled flatbreads received high reviews from my family!  Left overs store nicely in an airtight container.  You may freeze for up to one month and enjoy all month long!

Recipe:

1 package quick rise yeast (about2 1/4 tsp)

1 1/2 cups warm water

3 3/4 cups all purpose flour, divided

1 tablespoon kosher slat, divided

2 tablespoons shopped fresh rosemary, divided

Cooking spray

2 tablespoons olive oil

1.  Dissolve yeast in warm water in large bowl, and let stand 5 minutes.

2.  Lightly spoon flour into dry measuring cups, and level with a kinife.  Stir 1 cup flour into yeast mixture.  Cover and let stand 30 minutes

3.  Add remaining 2 1/4 cups flour, 1 teaspoon salt, and 1 tablespoon rosemary to yeast mixture; stir until a soft dough forms.  turn dough out onto a lightly floured surface, and knead until smooth and elastic (about six minutes).  Place dough in a large bowl coated with cooking spray, turning to coat top.  Cover and let rise in a warm place, free from drafts, 40 minutes or until doubled in size.  (Gently press two fingers into dough.  If indentation remains, dough has risen enough)

4.  Prepare grill

5.  Punch down flatbread dough; divide into 12 equal protions.  Roll each portion into a 4 1/2 to 5 inch circle on a lightly floured surface.  Brush dough rounds with olive oil, sprinkle rounds evenly with remaining 2 teaspoons salt and 1 tablespoon rosemary.

6.  Place dough rounds on grill rack coated with cooking spray; grill three to four minutes on each side or until puffed and golden.  Yield: 1 dozen (serving size; 1 round)

Hello World!

Standard

I am so excited to be in the blogging world once again…  it’s been a while since I have blogged and some things have changed!  Home Made Gourmet sold and I decided to work for another Company called Country Gourmet Home as a Consultant.  I am very excited to be working for this company that will soon be based out of Idaho.  To me, being a Country Gourmet Home Consultant is much more then just selling food mixes, decor and some fun lil’ extras.  I’d like to make it more about bringing families back to the table at the end of each day.  I’d like to stress the importance of “family” time, where kids and parents can share there day along side of a good home cooked healthy meal.  So many of us today are working parents who just don’t have time to come home after a long day and take an hour or two to prepare a home cooked meal for the kids.  That is where I can tell you, that CAN change!  Country Gourmet Home is just the place for you, where you can make this happen.  We offer food mixes that take only moments of your time to put together.  The meals are fabulous, fun to put together and your family will be well fed and happy to be sitting at the dinner table together!

With my new Blog adventure I will demonstrate the Country Gourmet Home meals through photos and step by step instructions so you can see first hand how easy these are to prepare and see the outcome with your own eyes.  Taste is then up to you!!  You can trust me when I say these meals are worth a try!  I consider my family to be picky eaters and they are my best critics!

So please “follow” me on this new journey of sharing food, love, inspiration and family.  I’m looking forward to bring these products to you and sharing my “country life” with you as well.  Lets “Simplify” our lives together, get back to the kitchen table and enjoy family values that have been lost in the hustle and bustle of our busy days.  After all, our families are growing up and we only have a short time together, so lets make each moment last!
